Spicy Chicken & Linguine Soup
1. Boil water with a packet of instant hot pot mix for the spicy soup base.
2. Cook linguine and add to the soup pot.
3. Stir in some chopped shallots, cooked chicken breast cubes, Chinese leaf cabbage and an egg. (The cabbage in the spicy soup base ends up tasting like kimchi!)

Inspired by @whimsicarol’s post, I also made a rice bowl with kimchi and egg yolk…With the addition of spicy pork belly because I was in hungry hippo mode.

I bought the pork pre-marinaded from M2M, an Asian food market located near me off Washington Square Park. It was a generous 2-serving package for only $5.28! I’m totally having the leftovers tomorrow.

At home, I cooked it in a hot cast iron pan with sliced garlic, scallions, and a spoonful of chili oil for an extra kick. The fresh egg yolk literally melted over the steaming hot rice—the cherry on top!

Sick Girl Soup
I was sick and made a pot of this soup to eat all day.
1. Place one beef shank in a soup pot of salted water and bring to a boil. Skim off the scuzzy foam.
2. Slice a small onion in half and add to the pot, along with 5 cloves of garlic. Let it simmer over medium heat. Throw in cauliflower florets and a handful of leftover rice. Add sea salt, black pepper and other herbs and seasonings. Gently simmer for about 1.5 hours.
3. Lift the beef shank onto a chopping board and cut into bite-sized pieces. Scoop out the marrow and discard the bone. Return the beef bits and marrow to the pot and simmer until either a) you’re so hungry you can’t take it, or b) the meat gets tender, which will be another 30 minutes to an hour. Sprinkle in fresh herbs like chopped parsley, scallions, and/or dill.
4. Adjust seasonings to your liking and ladle into a bowl. Top with snipped chives.
This soup will taste even better the next day!

Simply break the yolk of an egg on top of steaming hot rice, mix thoroughly, and add kimchi to the bowl.
*The egg yolk is actually leftovers from making pancake batter. I used so many egg whites that I had 8 egg yolks left (4 now).

These garlic shrimp skewers were only $2.29 each at Whole Foods. They’re a cinch to make—just pop them under the broiler for 5 minutes and they’re done!

Served here with steamed zucchini and yellow squash coins and homemade tatziki from nonfat Greek yogurt, lemon juice, minced garlic clove, dill, sea salt and black pepper.

These cheese poofs are the best—white cheddar jalapeño flavor. I can only find them in a farm shop near my parents’ house in Philly.

DIY Trader Joe’s Shopping Basket Pizza
Start with Trader Joe’s garlic naan or lavash bread and spread a generous amount of marinara sauce evenly across the surface. Sprinkle shredded organic mozzarella and pan-fried diced pancetta on top and pop into oven for 10-15 minutes. During the last 3-5 minutes, scatter diced pineapple chunks on the top to caramelize and brown. Takes a grand total of 15 minutes to make!

Quickie Flatbread Pizzas with Sandwich Stuff

One of the easiest things to make is a flatbread pizza using the same ingredients I usually use for wraps. I created two pizzas: one for a late dinner and I packed the second one in a gallon size Ziploc bag for lunch.

Top a wheat tortilla with sliced tomatoes, deli shredded pepper turkey, and whatever cheese you have. Bake at 350 degrees for 15 minutes or until the wrap is crispy. Top with arugula/spinach, drizzle with olive oil and balsamic vinegar, season with salt and pepper.

Spicy Meatballzzz

Yes, “meatballs” with three “z’s” at the end. I made these after a 12-hour day at the office.

What you’ll need:
-1/2 lb. ground pork
-1/2 lb. ground beef
-3 cloves of minced garlic
-3 tsp. of Italian seasoning
-3 T. grated Parmesan cheese
-2 tsp. dried red pepper flakes
-2 tsp. sea salt
-2 tsp. sugar
-1 1/2 T. Worcestershire sauce
-black pepper to taste
-1/2 cup bread crumbs
-1 egg
-1/4 cup milk

Mix all together and roll into 1 1/2” balls. Place on baking pan. Bake at 350 degrees for about 22-24 mins.

Gordon Ramsay’s Crispy Salmon with Crushed Potatoes
I was looking for something to do with this fresh salmon I just bought. I’m forcing myself to cook all this week until I start liking it. (Ugh. Growing up.) I watched Gordon Ramsay’s video on YouTube and was on speakerphone with my friend the whole time. Before I knew it, dinner was done!
The only thing I haven’t mastered yet is getting the portions right. I made enough for two servings and only ate three-quarters of it. Leftovers are great, but sometimes I don’t eat them in time before they go bad :(
